You know that feeling when you make breakfast for someone for the first time? That was me last week, sending out The Brekkie Club’s first newsletter! Thrilled, awkward, and nervously wondering if you’d like what I’d prepared.
Not going to lie, I hovered over that send button longer than I care to admit. But the responses, and the “Wow, this is big!” messages? Ah! You made my week.
So here we are again, back at my breakfast table on a warm, pleasant Sunday. There's oat dust on my counter, a spoon in my hair, and a story in the making.
Three Ways to Fall for One Avocado
I’ve been having a bit of an avocado moment, from “hmm” to “hell yes.” Here are three ways I’ve been loving them lately, all TBC style!

The Rose That Grew from Brunch
A base of creamy hummus and mashed boiled eggs gets the spotlight treatment with a hand-carved avocado rose on top. Finish with flaky salt, cracked pepper, chili oil (if you dare), and a whisper of lemon zest. This one’s not just breakfast, it’s art.
The Classic, Reimagined
Roughly mashed avocado seasoned with salt, pepper, and a touch of lime, then topped with juicy cherry tomatoes and crumbled feta. It’s tangy, creamy, bright, and satisfying—like your favorite playlist on toast.
The Crispy, Cheesy Morning Win
Fluffy scrambled eggs, sliced avocado, and melty cheese tucked inside golden toasted tortillas. It’s crunchy on the outside, creamy in the middle, and unapologetically indulgent. The kind of breakfast that makes a regular day feel like a weekend.
A Side of Health, Please
I used to think of oils as nothing but unhealthy fats, empty calories that contribute to weight gain and leave you feeling sluggish and drained.
I didn’t realize how much the kind and quantity of fat I was using could actually affect my energy and digestion throughout the day. Wild, right? I used to think grabbing that ‘baked’ processed snack was a healthy choice; turns out, not so much!
Over time, I began to notice that too much oil, especially the refined kind, can weigh your system down. I’ve felt it after deep-fried meals, the kind that taste great in the moment but hit hard an hour later with sluggishness, bloating, or even brain fog.
And I’d often point fingers at my sleep schedule, long work hours, or even how much water I was (or wasn’t) drinking.

Oils I use to keep things clean, light, and full of flavor.
Now, I mostly cook with ghee (rich in healthy fats), or sometimes coconut oil for its light, clean flavor. No refined vegetable oils, no butter, no deep frying. Just a spray, a swipe, or a single teaspoon.
Good fats (like ghee, olive oil, nuts, seeds, and avocados) support brain function, energy, and digestion. Bad fats (like hydrogenated oils, margarine, heavily processed vegetable oils) do the opposite. The more I choose right, the better I feel, clearer, lighter, more me.
So now, I don’t skip the fat. I just choose it like it matters. Because it does.

The Secret Ingredient That Changed My Mornings
Ground flax seeds: tiny but mighty! Full of fiber, omega-3s, and antioxidants, they are a great source of support for digestion. I blend them into smoothies, sprinkle them on oats, mix them into pancake batter, or even sneak them into my banana bread batter. Just a spoonful, and I’m ready to take on the day!
